Barley Pancake

Barley is a very old grain. It was used in the past when wheat was not available.

It contains much less gluten and there for is lighter and healthier.

The pancakes come out light and fluffy as if made of cotton fluff but still fulfilling and satisfying, isn’t that great?
I used no dairy but coconut milk which is full of minerals and good fat.

The sweetness is derived wholly from dried fruit, such as dates, dried cranberries or raisins. Whichever you like best.
A wonderful start for a productive day.
